Findings from the Meat Processor Survey

• Forty-six members of the Oklahoma meat processing industry provided responses to the survey.
• 65% classified themselves as "custom slaughterer and meat processor"; 30% classified themselves as "commercial meat processor".
• On average, theproportion of their businessincomes were as follows: 61.6% beef, 26.2% pork, 0.6% lamb/mutton, 10% poultry, 13.2% other (probably deer or ratites).
• On average, their business incomes proportionally came from: 62.4% custom, 23.2% retail.
• Slaughtering services by meat type were offered by respondents: 67% beef, 61% pork, 48% lamb/mutton, 0% poultry, 24% other.
• Cutting, wrapping, and freezing services by meat type were offered by respondents: 70% beef, 65% pork, 50% lmb, 13% poultry, 0% other.
• By meat type, mechanical tenderizing was a service offered by the following percent of respondents: 72% beef, 46% pork, 20% lamb, 4% poultry, 22% other.
• The following respondents made seasoned fresh sausage by meat type: 22% beef, 72% pork, 15% lamb, 0% poultry, 22% other.
• Cured and smoked meat products by meat type were offered by respondents: 15% beef, 59% pork, 7% lamb, 4% poultry, 13% other.
• Smoked and cooked sausages wee ffered as a service by respondents: 17% beef, 28% pork, 4% lamb, 0% poultry, 15% other.
• Making luncheon meats was an activity/service offered by respondents: 7% beef, 7% pork, 2% lamb, 2% poultry, 7% other.
• Making portion-control cuts (e.g. steaks and patties) was a service offered by respondents: 48% beef, 41% pork, 11% lamb, 4% poultry, 4% other.
• Rendering was a service offered by 4% of the respondents.
• 17% of respondents rent freezerspace.
• 34% offer delivery services.
• 81% of the respondents were state-inspected processors.
• 87% are satisfied with their inspection status.
• The average respondent’s plant was built in 1967.
• The average respondent had a plant expansion or renovation in 1991.
• 35% of respondents have a facility with 1,000-2,999 square feet of space; 21% have 3,000-4,999 square feet.
• By combined FTEproportions (e.g. adding 0.5’s and .25’s of full time employment or FTE), respondents on average employed the following for activities/services: 4.1 slaughtering, 8.3 cutting/grinding/wrapping, 3.7 further processing, 2.6 clean-up, 2.13 management.
• Wage rates per hour for these employees were on average: $7.98 for cutting/grinding/wrapping, $7.94 for curing and smoking, $6.96 for clean-up.
• 56% of respondents had assets of between $200,000 and $550,000.
